Im making a haper for my friends who are like this super vegan power couple of sorts, not gonna tell you the whole contents cause that might spiol the surprise for them! But I just had to tell you about this one, as I think its such a sweet little gift! If you carnt seem to find a jar you could always put the mix in a zip lock bag, and pop that in a nice gift box with a tag/ the recipe in a card.
Ingredients:
1/2 cup demera sugar
1/2 cup of soft dark brown sugar
3/4 cup stoneground oatmeal
1 1/4 cup plain flour
1 tsp baking powder
1/4 tsp salt
1 tsp ground ginger
2 tsp mixed spice
a nice big jar, and a large luggage tag
For making the mix up:
1/2 cup of rapeseed/ vegetable oil
3-4 tbsp soy milk
Method:
whisk the baking powder and salt into the flour, then place all your ingredients in seperat bowls and laver them in the jar, alternating different ingredients, to create a pretty layer effect. Then write out these instructions onto the luggage tag:
Preheat the oven to 180c/350f and line two cookie sheets with baking parchment. Empty contents of jar into a mixing bowl, then whisk together with a fork. Make a well in the centre, add 1/2 cup of oil and mix in well, now add the soy milk a tablespoon at a time, mixing until the mix comes together as a nice dough. Roll into small golf balls and squish into disks, place on the cookie sheet and with a fork press in a criss cross shape. Bake for 10-15 minutes then remove from the oven and allow to cool fully before enjoying.
Tie the tag onto your jar and give as a gift to someone special, or one of those poor underpriveleged new vegans who dont have a good cookie recipe yet.
